Achar
What is achar?
A South Asian pickle, also known as Avalehika,Pachchadi,Achaar,Athaanu, Lonch,Oorugaal, or Aavakaal, is a pickled food native to the Indian subcontinent,made from a variety of vegetables and fruits preserved in brine, vinegar, or edible oils along with various Indian spices.
Ingredient
Indian gooseberry 200 g
100g lemon
10 to 12 green chilies
6-8 red peppers
50 grammes mustard seeds
2 tbsp fenugreek
12 ground black pepper
2 tbsp coriander seeds
1 tablespoon cumin seeds
1 tablespoon fennel
½ tbsp turmeric
Salt to taste.
Edible oil, 3-4 table spoons
Recipe
- Take a pan of boiled gooseberry 3-5 minutes
- Rest for two hours.gooseberry
- Half the lemon and green chilies.
- Roast mustard seeds,fenugreek,black pepper,coriander seeds,cumin seeds, fennel and then, after rest,
- Grinding in a mixer
- Take a pan and pour in edible oil for heat.
- Now we take a big bowl and add gooseberry,lemon,green chilly, and red chilly, add all spices and turmeric , salt, and mix well.
- Mix in the edible oil and set aside for two hours.
