JALEBI

 

What is jalebi?

Jalebi is a popular sweet snack in south and west Asia, Africa, and Mauritius. It goes by many names, including jilapi, jilebi, jilipi, zulbia, jerry, mushabak, z'labia, or zalabia. The South Asian variety is made by deep-frying refined flour batter in pretzel or circular shapes, which are then soaked in sugar syrup.

 


INGREDIENT

250g flour, refined

¼ tbsp of baking powder

½ cup curd

1 cup sugar (for making sugar syrup)

Clarified butter

A few strands of Safforn

Cream (optional)

Equipment

Old Empty Sauce Bottles or Pastry Bags

Whisk

Frying pan

Recipe

  • First of all, we will take a bowl and put the refined flour, baking soda, water, and curd in it, then mix it all with a whisk.
  • Then ferment it for the whole night.
  • Now your batter is ready for cooking.
  • Now transfer it into our bottle/pastry bag.
  • Heat clarified butter in a pan on a low flame and make spirals for jalebi.
  • Heat sugar, water, and saffron in a pan. Take off the heat once it starts boiling and small bubbles start to form.
  • Transfer the golden brown jalebi to the sugar syrup for a few minutes. Serve warm.

Garnish it with cream if you want.
